Crispy Gobhi Manchurian (Dry)

Place a pan on flame add water, salt & boil on medium flame, add Gobhi pieces in it, cook on high flame for 2 minutes or until it is cooked 65%, turn off flame, remove the excess water, keep aside, let it be cool.

Take a bowl & add all-purpose flour, 3 tbsp cornflour, salt, kashmiri red chilli powder, now little by little add water & mix well, prepare a thick paste.

Now add cooked gobhi into prepared paste & coat well. Into the bowl add 1 tbsp all-purpose flour & 1 tbsp cornflour, mix well gently.

Heat oil in a pan on medium flame, one by one add Gobhi pieces into the oil & fry them until they turn light golden, transfer them into a plate, let them cool completely.

Once the gobhi is cooled completely, add it into hot oil & fry for some seconds, transfer the gobhi into a plate.

Place a kadhai on flame, add oil & heat well, add chopped garlic, chopped ginger & saute a little on high flame, after 30 seconds add chopped green chilli, chopped onion, roast well on high flame.

After 1 minute add 2 slit of green chilli & roast a little, add black pepper powder, salt, red chilli powder & mix well and roast.

After mixing it add soya sauce, red chilli sauce, tomato ketchup, mix well, add spring onion greens & mix well.

Now add water mix well & cook, after sometime, little by little add cornflour slurry (1 tbsp cornflour & 3 tbsp water, mix well) & mix well & cook on medium flame.

Now add fried gobhi into pan & coat well on all sides.

Turn off flame, Crispy Gobhi Manchurian is ready to serve, garnish it with spring onion greens
