Banana Yoghurt Ice Cream

Bananas turn spotty and black very quickly in hot summer. When I have very ripe Bananas, I usually bake Banana Cake but I don’t want to bake a cake on a hot day. Today I made this Yoghurt Ice Cream. I mashed the ripe Bananas and mixed with Yoghurt and whipped Cream. Even children can make this Ice Cream, and it is delicious.

Mash Ripe Bananas into smooth paste. *Note: I used a fork, but you need to use a stick blender if you want to make it absolutely smooth.

Add Caster Sugar and Greek Yoghurt, and mix well.

Beat Cream until soft peaks form. Fold into the Banana mixture and combine well.

Pour the mixture into a container. Freeze for a few hours until firm.

*Note: To soften completely frozen Ice Cream, transfer from the freezer to the fridge 20 minutes before serving, OR leave it at room temperature for 10 minutes.
