Canary Tamales

I was always intrigued by Canary tamales. When I saw the recipe from @cook_5363846 and realized I had everything at home to make them, I got to work. I was surprised they included rice because I thought most were just made with cornmeal or wheat flour, but in this case, I liked it for a bit of variety and found it very interesting for when you can't get tamale flour for some reason. You have to try them! I used my Thermomix, but you can make them without it without any problems. However, I don't recommend the guided recipe because it didn't work for me.

Ingredients

2 hours
8 small tamales
  • 1 cuprice flour (about 200 grams)
  • 1/3 cupMaseca corn flour or more rice flour (about 50 grams)
  • 1/2 cupbutter (about 100 grams)
  • 1/2 tablespoonbaking powder
  • 1/4 cupsugar (about 50 grams)
  • 2eggs
  • 1 teaspoonvanilla extract
  • 2/3 cupsweetened condensed milk (about 150 grams)
  • 8corn husks or aluminum foil as a substitute

Steps

    Beat the butter with the sugar and vanilla extract using an electric mixer until very creamy. Then add the eggs one at a time. Add the sweetened condensed milk and beat again.

    Add the baking powder and a pinch of salt. Beat and gradually add the flours until you achieve a spreadable consistency.

    Spread the mixture on each husk, or if you don't have them like me, you can improvise with aluminum foil. I know it's not the most traditional, but it helps in a pinch. Add raisins and chopped nuts to each tamale.

    Steam for about 1 hour or until the filling easily separates from the husks.
