These were good, please clean your mushrooms.I wash them with water and cider vinegar I don't care what they say you can't just rub dirt off with a damp paper towel. This is my take on Lydia Bastianich stuffed mushrooms 🍄

Ingredients

45 minutes
4 servings
  1. White button mushrooms (I used 2 small packs)
  2. Green onions, about 4 decent size, cut really small
  3. Red bell pepper, diced really small
  4. Stems from mushrooms, diced really fine
  5. Panko bread crumbs, I used plain
  6. Parsley, chopped fine, I only had dried
  7. Olive oil and butter
  8. White wine
  9. Parmesan cheese, grated (I used the sprinkle cheese)
  10. Italian Seasoning
  11. Garlic salt
  12. Black pepper

Cooking Instructions

45 minutes

    First set oven to 425 F

  2. 2

    Clean your mushrooms and remove the stems and set aside

  3. 3

    Saute stems, green onion, and bell pepper with a little olive oil just until they sweat

  4. 4

    Transfer to a bowl then add breadcrumbs, cheese, seasoning and a little olive oil and combine well

  5. 5

    Place mushrooms onto a small pan and stuff them with the mixture and place a very small piece of butter on top of each

  6. 6

    Add a little hot water mixed with the white wine to the pan and cover with foil on top

  7. 7

    Bake for 15 minutes then uncover and bake for an additional 30 minutes

  8. 8
