In a pot over the stove, melt the butter and olive oil. Add the sliced onions and stir. Once the onions start to soften, add the flour, garlic, and sugar. Reduce the heat to low and cook for 35 to 40 minutes, stirring occasionally, until the onions are caramelized.

When the onions turn a light caramel color, pour in boiling water and add the spices. Let it simmer on low heat for 10 minutes. Then blend the mixture with an immersion blender until the soup is creamy.

Pour the soup into oven-safe bowls. Sprinkle half of the cheese on top, arrange the toasted baguette slices over the soup, and top with the remaining cheese. Place in the oven until the cheese melts, then remove and serve. Enjoy!
