Pasta with sauce "airi"

I named this recipe "Pasta Airi", after my childhood best friend (Hajrije / Airi). She lived in Tolentino, Italy and used to make this pasta sauce each summer she would come home to North Macedonia, and whenever she made it, she said that the recipe doesn't have a specific name, however, she discovered it while experimenting with different ingredients.
Shortly after I learned the recipe from her I started making it for my family and then during my college years in Skopje I made it for my roommates, and everyone loved it.
Even the people that hate peas! 🤷🏻♀️😁
Everyone asked me for the recipe and I never had a name for the recipe.
So today in order for me to share it with Cookpad, I had to develop a name..so eventually I named it after my childhood best friend.
(To all the Italian people who might see this one day if this recipe has a name please let me know)

Steps
- 1
Add the 5 tbs of sunflower or olive oil into a pot.
- 2
After the oil has been heated up enough, add the 750 gr pomodoro sauce along with the salt and black pepper
- 3
Let it slow cook for about 10 min. Whilst in another pot add the water, salt and oil for the pasta.
- 4
While the tomato/pomodoro sauce is slowly cooking it is good to add a little bit of water like a small cup(50ml) just so the sauce doesn't get very thick from the beginning.
- 5
Then, add the canned peas, but make sure to remove some of the water that covers them in the can.
Stir it until the tomato sauce covers them and let it slow cook for another 10-20 minutes. - 6
While the pasta is cooking in the water stir it up a few times just so the pasta doesn't stick to the pan. And remove it from the water after 15 minutes
- 7
After the sauce has been cooking slowly, add the sour cream, and stirr it thoroughly. Let it slow cook again for another 15 minutes. Until the sauce creates a thick consistency.
- 8
After the sauce has gained a thick consistency, put it on low heat, or set it aside.
- 9
In a plate put some pasta, and add some sauce to it and serve it while still warm! Enjoy it!
Buon appetito!
