Ingredients

  1. 6-1/2 poundsbeef rump roast
  2. 1 cupsliced leeks
  3. 1 tablespoonAdolf's meat tenderizer
  4. 1-1/2 quartsbeef stock

Cooking Instructions

    Trim the fat set aside for rendering.

    Rendering the fat got some chunks of meat on it. Add meat tenderizer to the rump roast. I added to some brisket fat. Allow to tenderize for 1 hour.

    Preheat oven to 390° Fahrenheit. Add roast to the pan. Add the leeks to top and sides of roast. Add 1-1/2 quarts of beef stock to pan. Roast till firm when pushed. Don't fall asleep. The tuff tops were actually good when simmered in juices the next day. Serve I hope you enjoy!!!!
