Hearty Chilli Stew (Vegetarian)

To be honest, I wasn't going to upload this recipe, so it's not garnished, but the amount of flavour and how delicious it is surprised me, so I wanted to share it. It's savoury, spicy and just comforting! 🍲
Vegans, you can use of oil instead of butter. To achieve the creamy rich texture of butter, you could use crumbled tofu, an unsweetened plant-based milk, coconut or nut butter, or a vegan butter alternative! 🌱
Hearty Chilli Stew (Vegetarian)
To be honest, I wasn't going to upload this recipe, so it's not garnished, but the amount of flavour and how delicious it is surprised me, so I wanted to share it. It's savoury, spicy and just comforting! 🍲

Prepare all ingredients. I prefer medium to thick slices for stews. The exception are the potatoes - slice them into small cubes or wedges to make sure they cook properly, and that it doesn't take a long time.

Melt the butter in a pot. Add garlic, onion, and chilli peppers. After a few minutes, add a dash of balsamic vinegar and stir. Cook for a few more minutes until the vegetables release their flavour and soften up.

Add the mushrooms, bell peppers, and potatoes. Season with salt and pepper, a few drops of hot sauce, and herbs like parsley. Add water (to almost cover the ingredients but not quite), and a dash of balsamic vinegar. Add half of a vegetable bouillon cube. Keep stirring until it's all mixed well together.

Turn the heat down to medium and cover the pot. Let it lightly simmer for 15-20 minutes, while occasionally stirring. Keep checking to make sure that the potatoes are thoroughly cooked.

Then, add the beans in chilli sauce. Stir to mix it all in, and maybe add a few more drops of hot sauce. Turn the heat up and simmer for 5-10 more minutes, while occasionally stirring.

Turn the heat off. For best taste, let the stew rest for a while after cooking. The second portion is always tastier. Garnish with dried parsley (or similar) and enjoy your meal!
