I love shrimp ceviche, but it's hard to find fresh shrimp—it's almost always frozen. So I prefer to cook it first and then mix it with the other ingredients. It's a healthy, low-calorie, and delicious dish.

Prepare the ingredients. Clean the shrimp, removing shells and tails. Bring enough salted water to a boil.

Once boiling, turn off the heat and add the shrimp. Cook for 2 to 3 minutes, until they turn pink. Do not overcook. Drain and let cool.

Finely chop all the vegetables. I use the proportions listed in the ingredients, but you can adjust to your taste.

Mix all the vegetables in a bowl. When the shrimp have cooled, cut them into small pieces. Mix with the lime juice and season with salt. Let sit for 10 minutes.

Add the shrimp and lime mixture to the bowl with the vegetables and the teaspoon of olive oil. Mix well. Serve with saltine crackers, tostadas, or baked corn crackers as desired. You can also serve with avocado slices, though I didn't add any because I didn't have them.
