My mother used to make potato pancakes for us. I don't have her recipe. I have searched and tried many that weren't right. In speaking with someone I decided to try something different. It tasted like hers. I felt the warm memories of her.

Ingredients

5potatoes
1small white onion
2large eggs
3 Tbspfloor
salt and pepper to taste
Oil or non-stick spray for frying

Steps

Peel and wash the potatoes and onion in cold water.

Grate the potatoes and onion by hand, or in a food processor until finely granulated texture.

In a large mixing bowl add the grated potato mixture, eggs, flour, salt, and pepper. Stir to combine completely. Batter will be slightly liquidy.

Heat oil in griddle, or skillet over medium heat. When heated scoop batter with scant 1/4 cup measuring cup. Fry until lightly browned on one side, flip and fry the other side. Makes about 12 pancakes.

Serve with gravy, sour cream, butter, other sauce of choice, or plain.
