This super creamy, smooth, silky delicious recipe is paneer pasanda which is stuffed with dry fruits and a bit of spices to give it a sweet and sour yummy taste in a royal white gravy. This is a 2 step recipe in first step the stuffing is prepared stuffed in paneer and grilled and in second step the creamy smooth gravy is prepared. For this recipe take fresh and soft paneer and if the paneer is not soft or it's rubbery then follow my tips to make it soft.

If you are using frozen paneer or if it's not soft then put it in a warm water for 30-40 minutes make sure the water is warm not hot and if still not get soft then keep it further for 10-15 minutes in warm water. By this time the paneer will become super soft. Don't discard the water in which paneer is kept use it in kneading the dough for roti, poori or paratha or use it in making daal or any curry as the water has full nutrition of the paneer. Now cut the paneer in big cubes.

Further cut those cubes or cuboids in 2 or 3 slices as shown in the picture. Pasanda means thin slices so cut it like that but not too thin else it will break while stuffing. Now slit the pasanda in the middle but not till the end the 3 sides should be open and 1 side is attached. When all the paneer pasanda is cut then sprinkle some salt on both sides of it and keep it aside by this it will soften the paneer and add more flavour to it. Now take the cuts of paneer in a bowl and crumble it.

Then add all the above-mentioned ingredients of stuffing in the ingredients section and mix it well with the crumbled paneer. Don't add any water to it. It will mix and look like a dough. Instead of coarsely grinding the ingredients you can even finely chop them but make sure it's very finely chop otherwise the stuffing will not combine and come out of the paneer. Now divide the stuffing into equal portions and fill in the paneer. While stuffing press the joint side then stuff gently.

Otherwise the paneer will break. Like so stuff all the paneer pasanda. Then heat up a grill pan brush it with 1 tbsp oil and place all the paneer pasanda on it and fry it on medium flame. Once get beautiful golden brown colour then flip it and fry on other side as well. Once all the pasandas are fried keep it aside and let's prepare the gravy. Firstly make a smooth paste of cashews and keep it aside. In the same mixer jar grind the ginger,garlic, onions and green chillies and make a smooth paste

Now in a pan heat up oil and add butter to it when get combined add the ginger, garlic, onion and chilli paste to it and fry it till the rawness goes away and oil oozes out. Then add the yoghurt to it before adding beat the yoghurt and lower the flame then mix it further add the salt and other spices mentioned above and mix very well. After 2 mins add the cashew paste and again cook for 2 minutes then add the cream and mix well. Beat the cream before adding.

You can add less cream also but as it's a rich creamy gravy this much quantity is good. Cook for 2-3 minutes. Then add half cup of water and allow it to boil and then off the flame. The thickness of gravy depends on how much thick or runny gravy you want but don't make it too thin and the gravy is ready. Don't mix the paneer and gravy keep them separate otherwise the stuffing will dissolve in the gravy. Before serving heat up the gravy and keep out in the bowl.

Then place the fried stuffed paneer pasanda on top of it garnish it with some coriander leaves and serve.
