Finding meals that are simple, healthy, and comforting is hard, specially if you work 9-5 or simply a stay-at home mom always running around. This one is my favorite because it warms my heart and reminds me that comfort and health do go together. Cooking for yourself is a form of self-love and appreciation. Leftover stir fry, Bokkeum (볶음)

Ingredients

4 servings
  1. 2 cupsleftover rice
  2. 2 cupsChopped Broccoli 🥦
  3. 2 cupsextra firm Tofu chopped
  4. 1 cup frozen veggies
  5. 1 cupkimchi (optional)
  6. 3eggs
  7. 3-4 TBSsesame oil
  8. 3 TBSlow sodium soy sauce
  9. Roasted sesame seeds (optional)
  10. Seaweed (optional)
  11. you may need more oil if you leave the Tofu cooking for a longer on high heat. So use the sesame oil bit by bit up to where your food is not sticking completely to the pan

Cooking Instructions

    First, gather your ingredients to make the process easier. Chop the Broccoli 🥦 florets vertically (makes it cook faster) and Tofu in cubes as shown.

    Second, On medium to high heat, heat 1 TBS of sesame oil and add your Tofu after. Flip them every 3 minutes for 5-7 minutes depending on your stove.
    *it wont change color so don't worry.

    Third, Lower the heat, add the frozen veggies, and cook for 5 minutes. Then, add the broccoli and cook for 5-7 minutes until it withers. I sprayed it with pam.

    Fourth, add the kimchi and let it cook for 3 minutes then add 1TBS of sesame oil. Then, add the rice and stir for 5 minutes until combined.

    Fifth, push your rice aside as shown, add your last TBS sesame oil, crack your 3 eggs and scramble it for 3 minutes. Lastly combine the cooked eggs with the rest for 1 minute. Garnish with roasted sesame seeds and seaweed.
