Firstly, to prepared the filling, in an electric mini food processor add the paneer cubes, salt, kashmiri red chilli powder, coriander powder, garam masala powder, turmeric powder, kasuri methi, coriander leaves, fennel seeds, ginger garlic paste and lemon juice.

Pulse it for a minute. The filling is ready. Transfer it into a bowl and set it aside.

Next, wash and steam the potatoes.

To Prepare the Potato Mix: In a large mixing bowl, add the breadcrumbs, cornflour, salt, kitchen king masala or garam masala powder and butter.

Grate the steamed potatoes. Add the grated potatoes and mix until well combined. Form it into a dough. The potato mix is ready.

Grate the cheese and set it aside.

Now to prepare the potato pancakes: Apply oil on hands. Take a small portion of the potato mix. Form in into the shape of a ball. Flatten it a bit. Place the paneer filling in the center. Add grated cheese on top of the paneer filling. Bring all the ends together and seal it well and once again flatten it gently.

Prepare all the potato pancakes in a similar way. Now the potato pancakes are ready for cooking/frying.

Heat ghee or oil in a non stick pan. Place the potato pancakes on the hot pan and fry on medium flame on both sides until golden brown in color.

Remove from pan and transfer it into a serving plate.

Delicious Cheesy Paneer Potato Pancakes are ready. Serve it immediately on a bed of lettuce alongwith a hot cup of tea or coffee.
