In a pot, add the onion, clarified butter, and chicken thighs. Mix well. Add the mustard, salt, and black pepper, and stir everything together until combined. Add water and let it cook until the chicken is done.

To prepare the chicken filling, in a skillet, add oil, onion, mustard, salt, and black pepper. Sauté well. Add chopped chicken breast and cook, stirring, until everything is well combined. Add water and cook until the liquid evaporates. Once the chicken is cooked, blend it well in a food processor. Add an egg, cilantro, oil, lemon zest, and lemon juice to the mixture. Mix everything until you get a soft filling.

Fill the mixture into molds of any shape you have. Bake in a preheated oven at 340°F (170°C) for 12 minutes.

After baking, remove the molds from the oven, take out the filling, and arrange on a serving plate. Enjoy!
