Shami kebab buns

Shami Kebabs, the tender patties made with beef and yellow split peas, and then dipped in eggs and pan-fried, are a year-round favourite in Pakistan. Almost every house has a shami kebab freezer stash waiting for the next unexpected guest, tea time snack or even as a side with main meal.
The beloved kebab is also served with chicken pulao. Going a step further, I decided to use the kebab mixture to stuff rolls or buns. More like cinnamon rolls than stuffed buns.
I cheated here. Instead of cooking beef with the lentils and spices, I just mixed pre-made shami kebab masala with the ground beef and used this as the stuffing.
The dough is basic, simple dough. Rolled it out thin in rectangle form, spread the ground beef mixture evenly and then Swiss rolled it. Here, if desired, you can bake the roll and later slice it, or cut into bite size and bake. It’s a personal choice.
If you like, you can spread cheese as well. Even the seasonings can be substituted for to your liking.
I froze the extra buns in a zip lock bag to use for another day. Will just thaw it and then just before serving, warm it in microwave.

In a stand mixer, add the dry ingredients and mix well.

Add the egg, milk and oil and knead.

Gradually add water to knead a smooth dough, like pizza dough.
Place dough in an oiled bowl, applying oil on dough also. Cover and rest in a warm place for 1 hour or till double in size. - 4
In a food processor, add the ground beef, kebab masala and cilantro. Blitz to a smooth paste. Set aside.

Preheat oven 350F.

Turn out the dough on a floured surface and divide it into 2 pieces.
Roll out each piece into a very thin rectangle, without tearing. - 7
Spread the topping thinly and evenly over the top of each dough and start rolling like Swiss roll.

Cut the log into desired size pieces, ideally 5-6 and place on a parchment lined tray.

Bake for 1-2 hour or until nicely browned and cooked through.
