Quickly boil the spare ribs in hot water, transfer into cold water, and wash. Thinly slice the ginger root.

Place the spare ribs and the ★ ingredients in a pressure cooker, and cook over high heat. After the cooker has come up to pressure, lower the heat to medium-low. Cook under pressure for 20 to 25 minutes.

Let cool for 10~15 minutes. Tilt the pot at an angle, and make sure no more steam is coming out before opening the lid. Flip the meat over, and simmer for another 5 minutes.

Let the ribs cool in the pot. Heat them up right before serving. They will have soaked up the flavors and become even more delicious.
