Soya chunks and Aloo masala

Soak the soya chunks in boiling water for 10/15 mins. After that squeeze the excess water, and fry with little oil, just to get the colour slightly brown. Make a paste of onion, garlic, ginger, cumin seeds.

Heat oil, add bayleaf and the ground paste. Cook the masala, followed by tomato paste, turmeric, chilli powder, coriander powder. Cook the masala again for 2/3 mins, after which add roasted soya chunks, diced potato, salt and kasoori methi.

Mix and cook in slow flame for sometime, then add water. Amount of water will depend on the consistency you desire, if you want dry, add less water, i wanted a gravy so have added little more water. Once all nicely cooked, after switching off, sprinkle garam masala and chopped coriander leaves.
