Cost of food is increasing so much recently, but thankfully there are recipes like this sweet potato gnocchi that use few and affordable ingredients! It comes together easily and can be added into sauces, fried with some other ingredients or added into salads so there are loads to ways to enjoy - here I fried them alongside peppers and spinach but feel free to use what you enjoy!

The gnocchi can also be stored for future use, once you've made the dough and cut them and pressed them to size, just dust them with a little extra flour and place a portion of them in a plastic bag and store in the fridge for 2-3 weeks or the freezer for up to 3 months!

Pierce many holes into your sweet potato

While you wait, prepare your other ingredients, chop your garlic and peppers down, rinse your spinach etc.

Remove it from the oven and once it has cooled down enough to handle, remove the skin and break it down a bit to allow it to cool down further

In a big bowl, add your sweet potato in and mash it down with a fork till smooth. Add in the egg and 2 cups of flour and mix to bring together. Gradually add in an extra cup or two of flour until you get a soft workable dough - try not to add too much flour!

Flour your surface well. Divide your dough into 4 smaller pieces and take your first one. As you hold it roll into into some kind of thick log then place it on your surface and continue to roll the log out to get a long thin "snake" 🐍 then cut the log into 1/2 pieces. You may want to place some flour om your cutting tool every now and then to help cut your gnocchi

With your index finger, lightly press into each gnocchi to create a small dent in the centre.
At this point you can store the ones you don't need, just dust them with a little extra flour and place a portion of them each in a plastic bag.

Place water in a pot and fill it over half way, generously salt the water and let it come to a boil. Once it does get it to a gentle boil and add in your gnocchi - careful not to overcrowd the pot! The gnocchi will sink to the bottom but once they stat to float it means they are done so remove them and let them drain on a plate.

Once done, grab a large pan and add your oil, placing on medium heat. Once hot, add in your garlic and cook for 30 seconds then add in your peppers. Bring the heat down and cook for a couple of minutes. Then add in your spinach, salt and pepper and cook again for a couple of minutes.

Once the spinach has wilted, add your gnocchi in and fry both sides till they get golden brown in some areas. Then tuenthe heat off, add in some fresh parsley and stir everything once final time.

Plate up your dish and add some mozerella, then dig in and enjoy! :]
