A dish I love to cook a lot during the spring season is minestrone with cabbage, fresh fava beans, and artichokes, all flavored with sweet pancetta.

Remove the outer leaves of the cabbage, chop it, and wash it.

Blanch it for a few minutes, drain, and set aside.

Peel the fava beans and remove the small stem, which is bitter.

Remove the damaged outer leaves of the artichokes until you reach the tender, white leaves. Cut them in half, remove the inner choke, and slice them very thinly. Clean the stems with a vegetable peeler and cut them into fairly thick slices.

Immerse them in water with lemon to prevent browning.

In a pan, sauté the garlic with the pancetta, add the cabbage, fava beans, and artichokes with the drained stems.

Adjust the salt and cook on low heat, stirring occasionally... add hot chili pepper (optional). When all the vegetables have softened, turn off the heat and serve.
