No Oil- Hotel Scrambled Eggs

I'm always impressed when I have scrambled eggs at a hotel breakfast.
I used a recipe from a friend, who use to work as a chef at a hotel, and modified it to make it simpler and healthier.
The eggs will cook very quickly (Step 8), so when you think it's still probably a little too early to take off the heat - this is the right timing. For 1-2 servings. Recipe by *ai*

Boil water in a large frying pan or saucepan.

Put all the ingredients into a heatproof bowl. This bowl should fit inside the pan in Step 1.

Mix it well.

Boil the water from Step 1 over high heat. Then put the bowl from Step 3 into the large pan as a bain-marie.

The eggs will start cooking from the sides and bottom of the bowl, so bring these parts into the centre of the bowl while mixing. Repeat for several minutes.

Bring it into the centre like this. I think a spatula is easiest, but you can use chopsticks, fork, spoon, etc.

Gradually the eggs will become soft and creamy. When it is at this stage, it will just need a little longer.

Just before the eggs are at the perfect consistency, take it off the bain-marie. Mix the eggs a few times.

Transfer to a serving dish and it's done! Top with black pepper, ketchup, Parmesan, etc. of your choice.

It's really tasty, and it's fluffy and creamy without using butter or oil. Guilt-free indulgence. I don't think there are many people who wouldn't like this texture.
