‘Pakhala’ is a very commonly eaten food especially during summer, it’s basically rice with water, along with few ingredients for enhancing the taste.

The best taste of Pakhala comes if the rice is fermented with water overnight, which is called ‘Basi Pakhala’ in Oriya. ‘Saja Pakhala’ is made out of freshly cooked rice.

Also the rice used for Pakhala is important to get the better taste, best is boiled rice, if you don’t eat boiled, at least use the steam rice, it doesn’t taste great with raw rice.

Ingredients

  • 2 cupsCooked rice
  • 1 cuprice water
  • 1/2 cupfresh curd
  • Salt
  • 1/2cucumber diced
  • 3tender lemon leaves

Steps

    Keep the strained water of cooked rice. Arrange other ingredients.

    Mix rice and rest of the ingredients. Add 1 cup of cold water to make the desired consistency.
