Whole wheat banana bread

Bread: Preheat the oven to 350 F. Line a loaf pan (9 x 5 inch) with parchment paper. Beat the butter until fluffy. Add the brown sugar and cream together until fluffy. Add the cinnamon. Add one egg at a time, mixing well. Add the vanilla and mashed bananas.

Bread: Add the flour, salt, and baking soda, mixing gently until just blended. Do not overwork. Pour into the loaf pan.

Topping: mix the walnuts, sugar, and cinnamon. Sprinkle on top of the bread mix. Bake for 55 - 65 minutes, until a toothpick inserted in the center is clean. Cool in the loaf pan for 10 minutes, then remove from the pan and let cool completely. Wrap in plastic wrap and store at room temperature. Tastes more moist and developed the next day.
