White Cheddar Mac N Cheese with Chicken & Kale
A twist on the classic mac n cheese
Steps

Cook pasta in large pot according to instructions.

While pasta is cooking, add 1 tbsp cooking oil and 1 tbsp butter to large pot. Add chicken and kale and season with salt and pepper. Heat over medium-low until chicken cooked through and kale soft.

Once chicken/kale mixture is cooked, remove from pot and set aside.

Melt the 2 tbsp butter in same pot chicken was cooked in. Add can of evaporated milk.

Add garlic powder, paprika & salt, stirring to combine.

Once evaporated milk is hot, add shredded cheddar cheese a handful at a time, making sure to melt cheese completely before adding next handful.

Once all cheese has been added and melted, turn heat to low. Add the chicken/kale mixture and cooked pasta. Stir to combine and taste to see if more salt is needed.

All done, enjoy!
