White Cheddar Mac N Cheese with Chicken & Kale

Ingredients

  1. 1 box (1 lb)macaroni pasta or any small pasta
  2. 6-10kale leaves, cleaned destemmed and chopped to small pieces
  3. 2boneless skinless chicken breasts, chopped into inch size pieces
  4. Salt & pepper to taste
  5. 1 tbspcooking oil
  6. 3 tbspbutter
  7. 2x 12oz can evaporated milk
  8. 1/2 tspgarlic powder
  9. 1/2 tsppaprika
  10. 1 tspsalt
  11. 4 cshredded mozzarella/cheddar cheese mix

Cooking Instructions

  1. 1

    Cook pasta in large pot according to instructions.

    While pasta is cooking, add 1 tbsp cooking oil and 1 tbsp butter to large pot. Add chicken and kale and season with salt and pepper. Heat over medium-low until chicken cooked through and kale soft.

    Once chicken/kale mixture is cooked, remove from pot and set aside.

  4. 4

    Melt the 2 tbsp butter in same pot chicken was cooked in. Add can of evaporated milk.

  5. 5

    Add garlic powder, paprika & salt, stirring to combine.

  6. 6

    Once evaporated milk is hot, add shredded cheddar cheese a handful at a time, making sure to melt cheese completely before adding next handful.

  7. 7

    Once all cheese has been added and melted, turn heat to low. Add the chicken/kale mixture and cooked pasta. Stir to combine and taste to see if more salt is needed.

    All done, enjoy!
