I found this recipe on a package of Tobasco (my favorite hot sauce!) Made it for a Super Bowl party, BIG HIT. I was worried the blue cheese might be too intense or overpowering, but it was perfect. I recommend using it, even if you're not a blue cheese fan.

Ingredients

8 servings
  1. 1 lbdried elbow macaroni
  2. 4 tbspunsalted butter
  3. 3 tbspall purpose flour
  4. 3/4 tspsalt
  5. 1/4 tspblack pepper
  6. 3 cupwhole milk
  7. 6 ozshredded sharp cheddar cheese
  8. 6 ozshredded mild cheddar cheese
  9. 5 ozblue cheese crumbles
  10. 1/4 cuptobasco buffalo style hot sauce
  11. 12 ozcooked chicken, cut into 1/2 in pieces
  12. 1/2 cupchopped green onions
  13. 1 1/2 cuppanko bread crumbs

Cooking Instructions

    Preheat oven to 350°. Cook macaroni to al dente, and drain.

    Meanwhile, melt butter in large saucepan on medium-low heat. Stir in flour, salt, and pepper and cook 1-2 minutes. Whisk in milk and cook over medium heat until thickened and bubbly, stirring constantly.

    Reduce heat to low, and stir in cheeses until melted. Add Tobasco buffalo sauce, chicken, green onion, macaroni, salt and pepper to taste; mix well.

    Spoon into an ungreased 2 quart casserole dish and top with bread crumbs. Bake 25-30 minutes or until heated to an internal temperature of 165°
