This kulfi tastes delicious. It is made by caramelizing sugar. While kulfi is usually made with khoya (mawa), this recipe does not use it.

Set aside 1/2 cup milk from the total. Bring the remaining milk to a boil over medium heat for 10 minutes. Cook the sugar over low heat until it melts and turns brown. Turn off the heat.

Add the caramelized sugar to the milk and cook for 3-4 minutes. In the reserved 1/2 cup milk, dissolve the cornstarch and milk powder thoroughly. Add this mixture to the milk. Stir in 1 tablespoon sugar and the cardamom powder.

Let the kulfi mixture cool. Pour it halfway into 3 glasses. Cover the tops of the glasses with aluminum foil to seal. If you don't have foil, you can use plastic wrap to prevent ice crystals from forming.

Place the glasses in the freezer for 5-6 hours until the kulfi sets. Remove the glasses from the freezer. Take the kulfi out of the glasses and roll them in the finely chopped nuts. Slice the kulfi into rounds and serve.
