Okara Seaweed Vegetarian Floss

The okara (soybean pulp) left over from making homemade soy milk is rich in dietary fiber. With a bit of time and patience, you can slowly dry-fry it over low heat, then season with sugar and soy sauce to create a delicious vegetarian floss that's perfect with rice or congee.
TIPS
1. This recipe makes about 8 1/2 ounces (240 grams) of vegetarian okara floss.
2. Do not leave the stove unattended during cooking to prevent burning.

Steps

Place the okara in a nonstick skillet (no oil needed). Over medium-low heat, stir-fry the okara until it becomes loose and crumbly. Add the sugar and continue to stir-fry over low heat.

Add the soy sauce and keep stirring constantly to prevent burning.

Continue stir-frying until the okara is dry and fluffy, as shown in the picture.

Add the toasted white sesame seeds and stir-fry until you reach your preferred texture. Let cool, then cut some roasted seaweed sheets into small pieces and mix them in.

This fiber-rich vegetarian okara floss is delicious with rice or congee.
