Potato Chip Tortilla (Ferran Adrià’s Potato Chip Tortilla)

I’ve wanted to make this potato chip tortilla ever since Ferran Adrià made it popular. The other day, @beam8a tempted me, haha, so we got to work!
Fun fact of the day: for the first course, potato chip tortilla, and for the second, croissants with chocolate candies… all good! 😂😂
Potato Chip Tortilla (Ferran Adrià’s Potato Chip Tortilla)

Break the potato chips into pieces. In a bowl, lightly beat the eggs (just a little—you want to mix, not fully beat them). Add the potato chips to the eggs, gently pressing them down so they’re all coated. Cover with a towel and let sit for 15 minutes.

Heat the olive oil in a skillet. Pour in the egg and chip mixture. Let it cook for 2–3 minutes until it starts to set. Use a spatula to shape the edges, sliding from the top down along the edge of the pan.

Once it’s mostly set, place a plate over the skillet and flip the tortilla onto the plate.

Return the tortilla to the skillet, uncooked side down, and cook for another 2–3 minutes until set. It’s a showstopper!
