Have you ever had favorites that you wanted for dinner but couldn't pick which to make? Why chose sometimes. Fusion cooking to the rescue. A simple meal again that looks elevated. All pantry staples again so not really a need to run to the grocery store.

Mix the ground meats with all of the first section of ingredients.

Take a long piece of aluminum foil and spread it out. Place meat mixture on the foil creating an 8× 11 rectangle shape.

Mix up the artichoke spinach mixture. Spread it on top of meat leaving 1/2 inch uncovered around the edges.

Using the foil as help, start rolling meat.

Once meat mixture is completely rolled, place in baking dish and seal edges.

Bake in a preheated 350 degree oven for 40-45 minutes until meat is cooked through.

Let meatloaf rest 10 minutes before slicing and serving.

An added hint is that I made a seasoned couscous and added the rest of the can of artichokes. No waste here. Just chop and add to your side dish!
