Cut the tilapia into pieces and fry until crispy. Set aside.

Bring water to a boil. Add the Southern Thai curry paste and season with fish sauce and sugar.

Slice the papaya into medium-thick pieces (about 1 1/4 inches or 3 cm), remove all seeds, and wash thoroughly. Add to the pot with the curry paste. Cook until the papaya turns translucent, then add the tamarind paste. Taste and adjust seasoning as desired.

Add the Thai water spinach and gently stir just until it wilts, then turn off the heat.

Spoon half the soup into a bowl, add the fried tilapia pieces, then pour in more soup and vegetables until the bowl is full. Serve with rice and enjoy! 😋
