Break the chocolate into pieces and place them in a small saucepan. Set the saucepan over medium heat in a double boiler. Be careful not to let the temperature get too high—do not exceed 140°F (60°C)—to avoid altering the chocolate.

Remove from heat, cut the butter into small pieces, and add it to the melted chocolate. Stir quickly, then return to the double boiler for 3 to 4 minutes. Set aside.

Add the egg yolks one at a time, stirring constantly.

Pour the mixture into a shallow dish, let it cool completely, then refrigerate for at least 2 hours.

Pour the cocoa powder into another dish. Using a small spoon or melon baller, form balls of the chocolate mixture and roll them individually in the cocoa powder.

Keep these truffles chilled until ready to serve and enjoy!
