Sea Bass & Lime Couscous

Michael Fairless
Michael Fairless @EatMyShorts

Simple, yet tasty!

I've gone pescatarian for a month so it's been my goal to try out loads of seafood that I have never tried before. Pan fried fish has been my favourite thing to make so far as it's easy and fulfilling.

Sea Bass is a very nice fish, the meat is quite dense and the skin is delicious!

Steps

20 minutes
  1. 1

Add 1 tablespoon of butter to a frying pan and let it melt

  2. 2

Season Sea Bass fillets with lemon juice & basil

  3. 3

Fry for roughly 5 minutes either side until meat is opaque (or until the meat is a flaky texture)

  4. 4

Whilst the fish is cooking, add your couscous to a bowl (amount is relative to your preferences)

  5. 5

Dice 1 tomato & chop your coriander (cilantro if you are Spanish or American)

  6. 6

Boil vegetable stock with your diced tomato

  7. 7

Pour vegetable stock into your cousous bowl, stir & cover for 5 minutes

    {Don't forget to flip your fish in the pan}

  8. 8

Remove cover, add coriander & lime juice (not much lime juice is needed) and stir with a fork to fluff the couscous

  9. 9

Fish should now be cooked, so serve on a plate with the couscous

  10. 10

    Enjoy :)

Completely self-taught.. didn't bother learning at home, then I moved out at 19 and wanted to eat good food still! I'm now 23 and have been cooking relatively consistently ever since.I like trying new dishes and cuisines, tend not to follow recipes & just wing it myself, usually turns out good! My proudest creation was Strawberry Chicken, and believe it or not.. it tasted fantastic!

Seabass is so delicious and so versatile. Tastes good with zoodles. Enjoy your pescatarian month.
