Put chicken thighs into big bowl and add the spice mix and oil to it.

Give it a good mix so all thighs are well coated

Cover with clingfilm and then leave in fridge for min of 6hrs (ideally over night)

Get your spit and place the thighs on it. The best way to do this is crossing over. So the prongs 1 and 3 take the first thigh, and prongs 2 and 4 the next and you build there to get as in the pic

Next, put it to the heat and allow to cook till internal temp hits 165F. Then just slice away and have with whatever sides you want. Bread, chips, wrap, salad etc etc etc
