Creamy lemon feta and courgette orzo
Steps

Heat up 3tbs of olive oil in a frying pan

Add your diced onion and sauté for 2mins

Add in your minced garlic and sauté for about 30 seconds

Add in your Orzo and coat fully in the oil
- 5
Add in your shredded courgette and sauté for about 2 mins

Add in your chicken stock, milk, lemon juice and zest, Italian mixed herbs, salt and pepper

Bring to a boil then simmer for 10-12 mins adding more stock if it starts to look dry

Once cooked remove from the heat and add in your crumbled feta and fresh dill

Stir and serve on its own or as a side dish
