Potato Semolina Medu Vada is an instant recipe of crispy fried fritters or dumplings native to South India.Vada is normally made with ground lentils and requires overnight soaking .But this is an easy and quick recipe and can be made within minutes.Serve these delicious vadas with coconut or green chutney, sambar or with mixed pickle or tomato sauce at parties, as an evening snack with tea or as a flavourful and healthy breakfast option for children and adults alike.

Peel and grate potatoes. Wash 2-3 times remove starch.Squeeze out excess water.Heat 2 tbsp oil in a pan.Sprinkle cumin seeds.When they splutter, add grated ginger, white sesame seeds,chopped green chillies, chilli flakes and hing.Saute and add 2 cups water and 1/2 tsp salt.

When it boils, add grated potatoes. Boil 2 minutes and lower flame.Gradually add semolina and toss so that there are no lumps.Toss till a smooth dough is formed.

Add chopped coriander and fried curry leaves. Also add rice flour and finely chopped onion.Adjust salt to taste.Mix well and remove from flame.Add 2 tsp oil and knead to a smooth dough.

Smear your palms with oil and divide the dough into lemon sized balls.Flatten slightly and make a hole in the middle.

Heat sufficient oil in a pan or wok. Deep fry the vadas in batches till golden brown and crispy. They should be crisp outside while soft inside.Garnish with few slit and fried green chillies. Serve hot with coconut or green chutney,mixed pickle or tomato sauce as per choice in breakfast, as an appetizer or as an evening snack with a cup of tea or coffee.
