Mix dry yeast with tepid water. Add salt, sugar and oil. Add flower as you go. The dough should be very flexible. Raise in a bowl- with a bid of olive oil in bottom and covered with a damp cloth. We used the Ankersrum kithen mixer

Raise at room temperature 2 hours

Filling. Brown mince. Add onions, garlic, cumin, carrots, bay leaves,oregano, chillies and tomatoes- add a little water. Cook til dry. 20 minutes. Salt & freshly ground black pepper to taste.

Divide the dough into eight balls- roll out. Cover with damp cloth 1/2 hour
15 cm long- 10 cm wide. Add the mince filling- eggwash on the sides. Fold the dough towards the meat. Should be shaped like a boat. Drizzle with cheese- eggwash - 5
Preheated oven 200 degrees celcious 15 minuttes- raise till 220 degrees and bake for another 15 minuttes until nice and golden. Drizzle with a little oregano and chopped parsley and fresh chopped mint. Serve with a nice chilli sauce
