Chicken Thighs with Thai Basil

A neighbor gifted me a pot of Thai basil. In early summer, it grows lush and fragrant. Cooking it with chicken thighs makes the meat tender and the sauce rich—you might find yourself eating extra rice with it.

A neighbor gifted me a pot of Thai basil. In early summer, it grows lush and fragrant. Cooking it with chicken thighs makes the meat tender and the sauce rich—you might find yourself eating extra rice with it.
Steps
- 1
Prepare all the ingredients.
- 2
Homegrown Thai basil is very fragrant and tender—delicious to eat.
- 3
Get the marinade and sauce ingredients ready.
- 4
Rinse the chicken thighs, pat dry with paper towels, and cut into strips. Mix with the marinade and let sit for 30 minutes to absorb the flavors.
- 5
Peel and slice the ginger. Rinse the Thai basil and slice the chili peppers (skip if you don't like spicy food).
- 6
Heat a pan and add the sesame oil. Sauté the ginger slices until fragrant.
- 7
Add the marinated chicken thighs to the pan. Cook over medium heat until fully cooked.
- 8
Pour in the sauce ingredients. Simmer over medium-low heat for about 5-6 minutes, then add the sugar and cook until the sauce thickens.
- 9
Once the chicken is flavorful, add the Thai basil and chili peppers. Stir briefly, then remove from heat.
- 10
Serve on a plate and enjoy your meal.

[Tips]
* Stir-fry the Thai basil quickly—do not overcook, or it won't taste as good.
* For a stronger flavor, you can add some smashed garlic after sautéing the ginger.
