Season the pork chops and slice the green onions (separating white parts and green parts keeping only enough for garnish) and mushrooms (if needed)

Drizzle olive oil on pan and sauté pork chops until cooked through (160 degrees internally) then set aside on cutting board to sit

In same pan add drizzle more olive oil and sauté the sliced onion and mushrooms until slightly soft.

Add in pepper jam, balsamic vinegar and sour cream and stir until mushrooms fully coated then remove from heat

Slice pork chop filets and serve on side of mashed potatoes and top with mushroom sauce, green onion and goat cheese
