Zucchini Cordon Bleu
Great to make, even as mini appetizers.
Steps

Preheat the oven to 350°F (180°C) with convection if available.

Wash the zucchini and cut it into thick slices lengthwise.

Brush the slices with oil using a pastry brush to avoid using too much. Season with salt and pepper, then bake for 10 minutes.

Trim the zucchini slices to match the size of the cheese slices.

Coat each zucchini slice with breadcrumbs and press down gently.

Place a slice of cheese on top, then a slice of ham. For extra flavor, add another slice of cheese in the middle.

Stack the slices on top of each other.

Sprinkle Parmesan cheese on top.

Bake for about 7 minutes, until the cheese melts but the zucchini stays slightly firm. Brown the cheese with a kitchen torch or under a hot broiler.
