Preheat oven 425°.Place potato in a saucepan with enough water to cover.Bring to a boil and cool until tender about 5min.Drain,mash and set aside.

Meanwhile,crumble ground beef into a large saucepan.Add onions,garlic,herbs,salt and pepper.Stir in water.Cook over medium heat until meat is evenly browned.

Remove from heat and mix in mashed potatoes.Roll out the pie crust.Top with meat mixture in the middle.Fold on one side and crimp the edges with a fork to seal.

Glaze the crust with egg.Prick top crust few times with fork to vent steam.Bake for 25min.
