Samosas mostly made up of boiled potatoes 🥔 ,I'm using cutted potatoes 🥔 as a variation and for getting some different tastes and like everybody will feel that it's different b'cos cooked at home 🏡 and feel today something special in home

Nobody can resist these perfect pyramids of flaky pastry, stuffed with a delicious spiced potato filling! But not all samosas are created equal. Too dry, not enough filling, bad pastry, weak spicing..... So I set out to make my own, and am proud to now share with you my very own Samosa recipe - my idea of the perfect Samosa!

What is Samosa? Samosa is a deep fried pastry with a spiced filling usually made with potatoes, spices and herbs. Sometimes these are also made with minced meat (keema). Samosa is one of the most commonly eaten snack across India. They are hugely popular and are loved by everyone.

The traditional Punjabi Samosa is large and its filling is mainly made up of potatoes and peas. You can even add chopped cashew nuts and raisins to make them a rich and tasty snack.

For that extra zing to Punjabi vegetable samosa you can also add some chaat masala to the filling mixture.

Notes and tips on Punjabi samosa recipe. 1. Dough for samosa should be stiff which makes samosa's flaky and crispy. 2. Press the stuffing lightly in the cone to prevent the air pockets. 3. Ensure that the edges of the samosa are sealed properly so that the stuffing doesn't come out while frying.

  • For samosa filling
  • 3medium sized chopped potatoes 🥔
  • Tbspoon Cooking oil for cooking filling
  • tspRed pepper 🌶 powder
  • tspTurmeric powder
  • Salt 🧂
  • 2 Tbspchaat masala
  • 2 TbspAmchur powder
  • Tbspgaram masala
  • For samosa dough
  • 3 cupsMaida or fine wheat flour
  • 1and half cup semolina
  • Salt 🧂
  • Glasswater 💧
  • 1/2 CupCooking oil for making dough
  • For making samosa
  • Cooking oil for deep frying
  • Halfcup water 💧
  • 2 TbspMaida or wheat fine flour
  • Tempting ingredients
  • 250 gmpeas
  • Cupfried groundnuts
  • Chopped Green coriander leaves 🍃

    🌸 FOR MAKING SAMOSAS FILLING -
    Peel and Cut potatoes 🥔 in small size.

    Take a pan add cooking oil till heated add chopped potatoes 🥔 stir it well and add red pepper 🌶 powder, turmeric powder, salt 🧂 chaat masala. Amchur powder, garam masala on it. Mix it well by spetulla.
    Cover it with lid and stir it at regular intervals of time ⏲.

    When it becomes half cooked then add peas and groundnuts on it.
    Again cover with lid and stir it at regular intervals of time ⏲.

    When cooked remove from flame and take it aside.

    MAKING DOUGH FOR SAMOSAS -
    Take a saucer and put maida or fine wheat flour with semolina,cooking oil, salt 🧂.
    Make dough with the help of Water 💧.

    Cooking oil for making dough is in that amount in which fist 👊 ✊ 🤛 🤜 is made with flour.

    MAKING SAMOSAS -
    Take a piece of dough and make it round shape by palms of hands ✋.
    Put it on rolling board and spread it with the help of rolling pin.

    Cut it half with knife 🔪

    FOR MAKING GUM FOR STICKING WELL SAMOSAS -
    Take a bowl 🥣 put 2 Tbsp of refined wheat flour and half cup of water 💧. Mix it well.

    Take semicircular half and put gum of maida or fine wheat flour in half of semicircle. Fold it well.Then fold another half of semicircle.
    Make a cone.

    PRESS TIP OF CONE BY HAND ✋.

    Fill the filling of samosa and put gum of maida or fine wheat flour on all sides of cone to stick well.

    Firstly make 75 % or all samosa and put in a cloth and cover it with another cloth. This will protect them from drying its outer covering, saving your time ⏲ and most important save fuel and protect from the loss of cooking oil by heating.

    You can make this by sitting comfortably on mat with dough, rolling board, rolling pin stuffing and covering cloth.
    Ask family members to participate in making it and enjoying with gossiping and listening music.

    When all samosas are made then take a pan add cooking oil till heated add samosas and deep frying it.

    Enjoy with green coriander chutney, temerind and dates Chutney or sauce in teafin or in tea party
