Five days of sun drying will preserve fresh sweet peppers for the whole year, if cut in half before drying.

Wash whole peppers, slice top to bottom, remove stems and seeds, lay open face up on cardboard drying surface. Cover with fly screen, dry in full sun. After 4 days, when dry but still leathery, place thickest largest piece under upside down glass bowl in sun. If glass shows condensation, dry one more day, test again. If peppers are cracking, they are overdried, leathery is best. Keep in rolled up insect free paper bags.
