Ingredients

45 minutes
4 servings
  1. 3 cupscooked brown rice (left over), room temperature
  2. 9 ouncesmedium size shrimps, shelled and deveined
  3. 2beaten eggs, make omelet and dice it
  4. Vegetable oil
  5. 2 teaspoonsesame oil
  6. 1minced garlic clove
  7. 2 teaspoonsminced ginger
  8. 2 tablespoonssmall diced shallots
  9. 1 cupdiced red bell pepper
  10. 1 cupbroccoli florets and stems thinly sliced
  11. 1 cupcooked edamame beans
  12. 2 cupsbean sprouts
  13. 1 tbsp.soy sauce
  14. Salt to your own taste
  15. 1 tablespoonchopped cilantro (Optional)

Cooking Instructions

45 minutes
  1. 1

    Heat up 2 tablespoons vegetable oil in a wok or frying pan. Stir fry the shrimps until have a pink color. Reserve on the side.

    Add a couple tablespoons vegetable oil to the wok and stir fry garlic, ginger, and shallots for a few seconds.

    Add and stir fry, peppers and broccoli. Must be cooked al dente.

  4. 4

    Incorporate the edamame beans, and bean sprouts.
    Add brown rice, diced omelet, and heat it up.

  5. 5

    Add shrimps, and mix. If you wish you can split the shrimps length wise before mixing.

    Serve in a platter and sprinkle with chopped cilantro.
