Ingredients

Prep overnight, charcoal grill
2 people,7 skewers
  • 300 gramsveal from 1 pound short ribs with the fat, minced 3 times
  • 500 gramsmutton from 2 pounds of ribs with the fat, minced 3 times
  • 100 gramsmutton tail, substituted with mutton rib meat
  • PinchPepper, salt
  • 1 CupOnions, grated, squeezed dry
  • 1/4 cuponion juice
  • 4 Tbssaffron extract
  • 2 Tbsmolten butter
  • 1 Tbsbaking powder
  • Leftover lamb ribs stew
    California Farm Shepherd Lamb Goulash
  • Leftover Veal rib stew
    California Farm Cast Iron Beef and Beer Stew
  • Equipment: 20” long skewers
  • Cost: 4 pounds meat ribs $16, other $2, makes kebabs for 4 dinners plus stew for 4 dinners, $2.25 per dinner

Steps

Prep overnight, charcoal grill

    Debone the ribs, set bones aside to make veal stew and lamb stew later. Mince the meats three times. Test for stickiness of the meat, making sticky hamburger size meatballs. Mince longer if more cohesiveness required. Mix with pressed out grated onions, saffron, pepper, salt, baking powder.

    Mix minced meats with chopped squeezed onions, saffron, pepper, salt and baking powder. Let rest overnight. Make four hamburger size balls, moisten skewers with onion juice, put on skewer, flatten to kebab size.

    Start grilling over even charcoal fire, brush will saffron and molten butter halfway, then finish for flavor and color. They are delicious, moist, flavorful, not fat.

They came out superb, i had to scramble to find lamb and veal meats that were the right consistency
