Ingredients

20 minutes
4 servings
  1. 1.5 cupsfrozen Sweet Corn kernels boiled
  2. 2medium onions chopped finely
  3. 1 inchginger grated
  4. 4-5garlic cloves minced
  5. 6-7 tbspbesan/ gram flour /chickpea flour
  6. 2 tbsprice flour
  7. 1 tbspcornflour
  8. 1/2capsicum chopped finely
  9. 3-4green chillies chopped finely
  10. 2 tsplemon juice
  11. 1/4th tsp turmeric powder
  12. 1 tspKashmiri Red Chilli Powder
  13. 1/2 tspgaram masala powder
  14. 1/2 tspblack pepper powder
  15. 1 tspchaat masala
  16. 2 tbspcoriander chopped finely
  17. 8-10curry leaves
  18. 1/2 tspajwain
  19. 1/4th tsp hing /asafoetida
  20. To taste salt
  21. 1/4th tsp baking powder
  22. As neededoil for deep frying

Steps

    Boil the corn for 3-4 minutes and drain water immediately.

    Now add the chopped onions and boiled corn in a mixing bowl.Now add grated ginger,minced garlic,chopped capsicum,turmeric,Kashmiri Red Chilli Powder, black pepper powder,garam masala,chaat masala,ajwain, baking powder,gram flour, rice flour and cornflour.Add salt to taste.Mix well.

    Mix well smashing few corn kernels to release moisture. Add gram flour gradually as needed.The mixture should be thick and hold the shape.If needed,drizzle some water.

    Heat oil in a pan.Once it is hot,drop small portions of the batter in the hot oil.Deep fry in medium heat until pakoras are crispy and golden brown.Remove the pakoras with a slotted spoon to drain excess oil.Sprinkle some chaat masala and serve hot with tomato chilli sauce, coriander or tamarind chutney.
