Crispy Corn Pakoda

Corn Pakoda are crispy deep fried Indian style corn fritters made with besan ( gram flour), rice flour, sweet corn,spices and herbs.
It is a perfect evening snack or can be served as an appetizer when guests arrive during festivals like Diwali or any special occasions and tastes great with tomato chilli sauce, coriander or tamarind chutney which can be enjoyed with tea or coffee or any drinks.

Boil the corn for 3-4 minutes and drain water immediately.

Now add the chopped onions and boiled corn in a mixing bowl.Now add grated ginger,minced garlic,chopped capsicum,turmeric,Kashmiri Red Chilli Powder, black pepper powder,garam masala,chaat masala,ajwain, baking powder,gram flour, rice flour and cornflour.Add salt to taste.Mix well.

Mix well smashing few corn kernels to release moisture. Add gram flour gradually as needed.The mixture should be thick and hold the shape.If needed,drizzle some water.

Heat oil in a pan.Once it is hot,drop small portions of the batter in the hot oil.Deep fry in medium heat until pakoras are crispy and golden brown.Remove the pakoras with a slotted spoon to drain excess oil.Sprinkle some chaat masala and serve hot with tomato chilli sauce, coriander or tamarind chutney.
