Trofie pasta with spinach, pesto and ricotta cheese

Pasta is always a great opportunity to do a fridge-clearout, and that's what I did to make this for lunch last week. In the Summer I usually have some home-made pesto sauce in the fridge, and I decided to mix the last spoonful of my most recent batch with the remains of a tub of ricotta cheese to make a creamier pesto. I also needed to use up some baby Spinach leaves, a few stray mushrooms and a couple of slices of smoked ham. The result was this very tasty, and pretty healthy 👌, pasta dish.

Put a pan with salted water over a moderate heat and when it starts to boil, add the pasta. While it is cooking, lightly fry the onions in a little olive oil for a few minutes. Add the sliced mushrooms, a pinch of salt and grind some black pepper. Add the ham and spinach.

Cover the pan and while the spinach is wilting, mix the pesto and ricotta cheese. Add to yhe pan and mix in well.

Add a little of the pasta water to the pan and stir. Drain and add the pasta. Taste, adjust salt and pepper and enjoy!!
