2 tablespoonsolive oil
1 tablespoonbalsamic vinegar
1/2 teaspoonsalt
1/4 teaspoonpepper (Optional

Wash the beets and place it in a baking pan and roast it at 400°F. for about 1 hour. Let it cool off and remove skin.

Dice or slice the beets and season with the olive oil, balsamic vinegar, salt, and pepper. Ready to serve.
