Ingredients

  • 1large onion, chopped (one cup)
  • 1medium green bell pepper chop (one cup)
  • 2medium carrots, chopped (three-quarter cup)
  • 1 cuporange juice
  • 2 teaspoonspaprika
  • 1 teaspoonground coriander
  • 1/8 teaspooncrushed red pepper
  • 1 can (14 1/2 ounces)whole tomatoes, undrained
  • 2 clovesgarlic, finally chopped
  • 1 can (15 ounce)black beans, rinsed and drained
  • 4 cupshot cooked brown rice
  • 1lime, cut into wedges

    Heat, onion, bell pepper, carrots, orange juice, paprika, coriander, red pepper, tomatoes, and garlic to boiling in 2-quart sauce pan; reduce heat. Cover and simmer about 45 minutes, stirring occasionally until thickened; remove from heat, stir in beans.

    Place one cup of bean mixture in blender or food processor. cover and blend on medium speed about 30 seconds or until smooth. Stir blended mixture into bean mixture in sauce pan. cook over medium heat about three minutes or until hot. Serve over rice with yogurt. Sprinkle with paprika serve with lime wedges.
