Soya Chunk Curry Masala

Today's Soya Bean Curry is made in the Instant Pot with pantry staples and tastes out of the world. This curry masala is a healthy dish served as main course in India. The vegetarian dish is a great alternative to chicken, thanks to its high protein content and healthy properties.

First of all, heat water in a pan, add soya chunks and salt to it, mix well and boil it for 5 minutes till it comes to a boil. After that, take the soya chunks in a strainer and drain all the water from it and cool it. After that squeeze out all the water from these soya chunks with a light hand and dry the soya chunks.

Now add hung curd in a big pot and whisk it. After that add turmeric powder, Kashmiri red chilli powder, coriander cumin powder, garam masala and salt and mix well. Now add soya chunks to this masala paste and mix well to coat the masala. Now cover the lid and let this marinate rest for 15 to 20 minutes.

Now heat oil in a pan, add slices of onion to it and fry it until the onion becomes soft. Now add dried red chilli, garlic cloves and ginger pieces to it, mix well and saute until the onion turns a light golden color.

Transfer the onion to another bowl and cool itl. Now take the fried onions in a mixer jar and add 2 tbsp of water and grind them to make a paste.

Now heat another pan of oil and add bay leaves, black peppercorns, cloves, large black cardamom, green cardamom and a piece of cinnamon to it and saute it. Now add cumin seeds and fry it, add crushed onion paste and saute it for 2 minutes. After that reduce the gas flame, add marinated soya chunks to it, mix well and saute for 3 to 4 minutes.

Now add hot water to this and mix it well. When the water boils a little, add chopped tomatoes to it and mix it well. Cover the lid on medium flame of gas and let it cook for 10 minutes.

Now add garam masala and kasuri methi to this and mix well. After that turn off the gas flame and add finely chopped green coriander leaves and mix well.

Now our restaurant style soya chunk curry masala is ready for serving. Serve with fulka roti, Paratha or hot steamed rice.
