Cooking Instructions

Fill sauce pan half with water. Put a larger glass bowl on top so that the bottom of the glass does not touch the water in the pan. With an inch of air space between the water in the pan and the bottom of the glass bowl, you now have a fool proof double boiler to make cheese, no thermometer needed.

Make a cup of 36% heavy cream with lukewarm water and dried cream, stir in glass bowl of the double boiler over medium heat till bubbles appear in the cream, about five minutes.

When bubbles form in the cream, stir in teaspoons of Meyer lemon juice one at a time till cream curdles. Pour into clean kitchen towel in collander, put in fridge, drain off the whey overnight. Save whey in freezer for cooking. Fresh creamy Mascarpone will be ready in the morning. Stays fresh 3 days.
