Ingredients

2 people
  • 2Avocados, halved and stones removed
  • 4Eggs
  • 2Cherry Tomatoes, cut into quarters
  • Grated Cheese
  • Chilli Flakes
  • Salt and Black Pepper
  • 50 gChevin Cheese
  • LeavesCoriander

Steps

20 minutes
  1. 1

    Preheat the oven to 200°C.

  2. 2

    Evenly scoop flesh from each Avocado half, to make space for the eggs. Set the scooped flesh aside.

    Place the avocado halfs on a muffin pan to keep them stable. Place an Egg in the hollow of each avocado half.

    Add the Cherry Tomatoes and Grated Cheese on top of the egg.

    Season with Chilly Flakes Salt and Pepper.

    Bake in the oven for 10–12 minutes or until the egg whites are cooked.

  7. 7

    Mash the remaining avo with the Chevin Cheese and season with Salt and Pepper.

    Once the eggs are cooked, remove from the oven garnish with the avo mash and Coriander Leaves.
